FRESHNESS & FLAVOR are best achieved by using whole coffee beans and following these guidelines: Proportion, Grind, Water and Freshness ‹ understand and follow the guidelines for each of them, and you're on your way to brewing a great cup of coffee every time.
Proportion:
Use the right proportions. When making brewed coffee, allow 2 to 2 1/2 level tablespoons for each 6 ounces of water (3 tablespoons for 8 ounces). For espresso, allow 7 to 8 grams for a single shot, and 14 to 16 grams for a double shot. From here an individual can adjust to their own personal taste. If coffee brewed this way is too strong, you can add more water or a little less coffee the next time you brew.
Grinding Coffee:
Never grind more coffee than you will use for immediate
brewing. Once the beans are ground, the flavorful oils are exposed to the damaging air. As these oils dissipate, so will the flavor of your coffee. Once ground, coffee will begin to lose its flavor almost immediately. Different brewing methods have different grind requirements, so grind your coffee for
the brewing method you use.(See Grinding Tips)The amount of time the coffee and water spend together affects the flavor elements that end up in your cup of coffee. For instance, coffee ground for an espresso machine should be very fine, in part because the brew cycle is only 19 to 22 seconds long. But for a coffee press, the coffee should be coarse ground, because the water and coffee are in direct contact for about four minutes.
 
Water:
Two of the most important factors in a great cup of coffee are the brewing temperature of the water and the quality of the water. Use fresh, cold water heated to just off the boil. A cup of coffee is 98 percent water. Therefore, the water you use to make coffee should taste clean, fresh, and free of impurities. Water temperature should be between 185-195° F to get the best extraction from the ground coffee. Any cooler and the water can't adequately do the job. Automatic coffee makers heat the water for you. Make sure the one you use gets the water hot enough.
 
Freshness, Storing Coffee:
Use freshly ground coffee. For the best results, coffee should be ground just before brewing. Whole bean coffee stays fresh longer because there is less surface area exposed to oxygen. By grinding beans each time you brew, the freshness is preserved. Coffee is a perishable. To keep coffee fresh, store it in an opaque, airtight container at room temperature. If you want to take advantage of buying in larger quantities or for storing for longer periods of time, we do suggest storing coffee in your freezer. Simply store the beans in smaller size packages; about what you will use in a week, that can be removed from the freezer just once.
 
Schoolhouse Gourmet Coffee is only sold as whole bean coffee! Remember, whole bean coffee will stay fresh longer than ground and grinding whole beans just before brewing will achieve the best tasting cup of coffee.

 

This species (Arabica) produces superior quality coffee, which possess the greatest flavor and aromatic characteristics. They typically contain half the caffeine of the robusta beans.
